Carob Carrot Smoothie (AIP, keto option)





Breakfast can often be challenging on the AIP diet considering eggs are not elimination phase compliant. In the summer, I would often switch out my typical savory breakfast with a delicious smoothie. But in the winter months, and for someone who has Raynaud's, a cold smoothie does not give me a jump start to my day. So why not make a warm smoothie? I experimented with some of my favorite AIP alternative goodies and came up with this delicious drink. I hope you enjoy it!



Ingredients:

-1/2 cup cauliflower, steamed, then frozen or cooled

-2 scoops collagen powder

-1/4 cup carrot juice, gently warmed

-1 tbs MCT oil

-1 tbs carob powder

-1/4 cup coconut milk, full fat or homemade, warmed

-1/2 tsp cinnamon

-chicory root "coffee" (optional, see directions below)


Directions:

1. Using a high-powdered blender, blend all ingredients until smooth. For a thicker smoothie, add more cauliflower and reduce coconut milk.

2. For a keto option, omit the carrot juice and add more cauliflower. If needed, sweeten with stevia or keto friendly sweetener of choice.

3. For chicory root coffee recipe, feel free to google those exact words and follow any recipe you find. However, it is very simple. I like a strong "coffee," so I use 1 tbs of chicory root and steep it using 1/2 cup water (I use a french press). You can add this to your smoothie if you enjoy the taste. Chicory is great for liver detoxification as well!
